Here's a great Christmas cake recipe I was given by my brother-in-law
Makes 6" cake
100g | (4oz) | | Soft Brown Sugar

1 Dessert Spoon | | Treacle
|
2 | | Large Eggs
|
4 Dessert Spoons | | Sherry
|
1/2 tsp | | Vanilla Essence
|
50g | (2oz) | | Self-Raising Flour
|
75g | (3oz) | Plain Flour
|
1/4 tsp | | Mixed Spice
|
Pinch | | Ground Cinnamon
|
Pinch | | Nutmeg
|
150g | (6oz) | Currents
|
150g | (6oz) | Sultanas
|
150g | (6oz) | Raisins
|
25g | (1oz) | Glace Cherries
|
25g | (1oz) | Ground Almonds
|
Grated Rind | 1 | Lemon
|
- Grease and flour a 6 inch tin
- Heat oven to 135C (GM1)
- Cream the fat and the sugar, beat in the treacle
- Beat eggs, sherry and vanilla essence together.
- Mix the egg mixture into the fat and sugar, alternating with the flours and spices.
- Add the remaining ingredients, but do not over mix. Mixture should be fairly stiff.
- Turn into prepared tin, and leave for 10mins, then give a tap on the table to settle.
- Put in oven for 2 1/2 to 3 hours.
- Leave a day before putting in tin.
- Leave several days before marzipan. Leave a week before icing.
