Mocha Mouse

Be careful when selecting the chocolate you use for this. I've had complaints in the past that this has been too rich!

Serves 6
100g (4oz) Dark Chocolate
2 x 5ml (2 tsp) Instant Coffee
1 x 15ml (1 tbsp) Warm Water
600ml (1 pt) Double Cream
10 Amaretti Buiscuits, crushed.
  1. Gently melt the chocolate in a small saucepan. Leave to cool slightly.
  2. Disolve coffee in the warm water.
  3. Beat the cream in a large bowl until it peaks, fold in the chocolate, coffee and biscuits.
  4. Spoon mixture into a large serving dish, cover and refrigerate for at least one hour.
