Spaghetti alla Carbonara

A refreshing alternative to all those tomato pasta sauces. You can use any pasta, but it works best with the simpler shapes as you can judge the consistency of the sauce easier during cooking.



Serves 2
225g (8 oz) Spaghetti
4-6 slices Bacon
3 Large Eggs
1 1/2 tbsp Grated Parmesan Cheese (cheddar will work!)
Salt and Pepper
  1. Cook pasta and grill bacon.
  2. Beat eggs in a bowl and mix in pepper, cheese and chopped bacon.
  3. When pasta is cooked drain and return to it's saucepan. Quickly add egg etc. and mix. You want to just mildly cook the egg, but retain the sauce consistency, may take practice. Use a low heat if the pan isn't hot enough.
  4. If you want a creamier sauce, add 2 tbsp of double cream.
