One Shrove Tuesday, my flat and guests got through 139 of these. For my ideal pancake I squeeze some fresh lemon on a plate, place the pancake on, put a half an inch stripe of Nutella across the diameter, and roll up. Perfect.

Makes over 10
110g (4 oz) Plain Flour
Pinch Salt
2 Large Eggs
200ml(7 floz) Milk mixed with
75ml(3 floz) water
Butter/Lard for frying
  1. Sift flour and salt into a large mixing bowl.
  2. Make a well in the centre and break an egg into it. Add a bit of milk/water and whisk in. Repeat with other egg.
  3. Add small quantities of milk/water, incorperating all the flour from the edges.
  4. Ignore any lumps and keep steadily adding milk/water until you have a smooth batter, the consistency of thin cream.
  5. Fry in butter, so don't have the temp too hot, or use too large a pan for your heat source.
